If you want light, flaky scones every time, follow these simple but essential tips:
1. Start with Chilled Ingredients
Cold is the magic word! Use cold butter, eggs, and milk or cream.
The cold fat creates small air pockets as it melts in the oven, giving you those irresistible flaky layers.
2. Choose the Right Flour
Opt for high-quality all-purpose (plain) flour.
This provides the perfect balance of tenderness and structure.
3. Measure Accurately
Precision matters in baking.
Use a digital kitchen scale for the most accurate results.
If you're using measuring cups, spoon the flour into the cup and level it off—don’t scoop directly from the bag, as this can pack in too much flour.
4. Preheat Your Oven (with a Twist!)
Before you start mixing, preheat your oven 10°C higher than the required baking temperature.
This compensates for the slight heat loss when opening the door to place the scones inside.
After the scones are in, adjust to the correct temperature.
