๐ Pineapple Pecan Banana Bread ๐
Ingredients:
1 1/2 cups all-purpose flour ๐พ
1 teaspoon baking powder ๐ง
1/2 teaspoon baking soda ๐งผ
1/2 teaspoon salt ๐ง
1/2 cup unsalted butter, softened ๐ง
1 cup granulated sugar ๐
2 large eggs ๐ฅ๐ฅ
1 teaspoon vanilla extract ๐ฟ
3 ripe bananas, mashed ๐๐๐
1/2 cup crushed pineapple, drained ๐
1/2 cup chopped pecans ๐ฐ
1/4 cup chopped pineapple, for topping ๐
Pecan halves, for topping ๐ฐ
Directions:
1๏ธโฃ Preheat your oven to 350ยฐF (175ยฐC) and grease a 9x5 inch loaf pan.
2๏ธโฃ In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3๏ธโฃ In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4๏ธโฃ Mix in the mashed bananas and crushed pineapple until well combined.
5๏ธโฃ Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pecans.
6๏ธโฃ Pour the batter into the prepared loaf pan. Sprinkle the chopped pineapple and pecan halves on top.
7๏ธโฃ Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
