Mondays are busy, but lunch doesn’t have to suffer!
As a mum and entrepreneur always working through lunchtime, getting a proper, nutritious meal can be tough.
This easy, veggie-heavy pasta salad has become our weekly go-to. Prepped the night before for Mr. G and myself, it’s the perfect grab-and-go meal.
I always top it with The Vegan Chef Southern Fried Chicken pieces for that irresistible high-protein crunch. The best part?
Even the kids are obsessed, making it a total family win.
