In koi breeding, Senbetsu is the meticulous process of selecting the very best young koi from thousands of siblings. Using decades of experience, breeders evaluate body shape, skin quality, pattern, growth potential and overall balance, keeping only the fish with the greatest promise while the rest are moved on. It is one of the most important stages in producing world-class Nishikigoi.
