Stylin' Tea Blends

Once in a while (or maybe more often) it’s nice to enjoy a nice sit down with friends over a cup of milk tea.

Maybe we should do this more often than once or twice a year!? ;)

Some mornings just need a kickstart with a good batch of milk tea (known as Chai in east Africa, Chai in India is just black tea. Tea with spices is Chai Masala)

This is made with a good robust black tea, typically Ceylonese (Sri Lanka) or Kenyan black tea, a tippy flowery orange pekoe.

Bring water up to large bubbles forming but not boiling
Add sugar, add tea, add milk. Stir and Simmer for 4-5 minutes and remove from heat.

Ratios are 4 parts water, 1 part milk.
1 mounded teaspoon tea leaves per cup of water and milk, and 1 more for the pot, same for the sugar.

For this pot I did approximately 2 quarts water, 2 cups milk, 1/4 cup tea, 1/4 cup sugar.
