Who doesn’t like a good Meat Loaf?
Ingredients:
2 tablespoons salted butter
1/2 cup finely chopped onion
1 1/2 pounds of ground beef
4 ounces buttery round crackers (crushed)
2 large eggs
1 1/2 grated cheddar cheese
1/2 cup tomato sauce
1 1/2 teaspoons kosher salt
1/4 teaspoon ground pepper

For the tomato sauce:
1/4 cup ketchup
4 tablespoons brown sugar
1 teaspoon dry mustard
Dash or 2 of hot sauce
Dash or 2 of Worcestershire sauce

Directions:
1. Preheat the oven to 350 degrees
3. In a large skillet melt the butter over medium heat, and cook the onion about 5 minutes, until onion is tender. Remove from heat let cool, and season with salt and pepper.
4. In a large bowl, mix the onion, ground beef, crushed crackers, egg, cheddar cheese, tomato sauce, salt, and pepper. Use your hands to lightly work all ingredients together.
5. On a 9x13 inch baking pan, form the mixture into a roughly 6x9-inch loaf.
6. Bake for 40 minutes uncovered.
7. Meanwhile make tomato sauce: In a small bowl, mix together ketchup, brown sugar, dry mustard, Worcestershire, and hot sauce .
8. Pour tomato sauce over meat loaf and bake for an additional 20 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
