🌮 Barbacoa Tacos! 🌮

This slow cooker barbacoa is rich, juicy, and packed with bold flavor. Perfect for taco night, meal prep, or feeding a crowd and your house will smell amazing all day.
*Double the recipe if you have boys!
✨ Ingredients
• 3 lbs beef chuck roast
• 1/4 cup apple cider vinegar
• 1/4 cup fresh lime juice
• 1 Tbsp olive oil
• 1 onion, chopped
• 4 cloves garlic, minced
• 2 tsp carnitas powder
• 2 tsp ground cumin
• 2 tsp dried oregano
• 1 tsp smoked paprika
• 1 tsp chipotle powder
• 1 tsp salt
• 1/2 tsp black pepper
• 1 cup beef broth
• 2 bay leaves
For serving:
• Healthy Tortillas or Lettuce Wraps
• Fresh cilantro
• Lime wedges
🍲 Instructions
1️⃣ Place the beef chuck roast in the slow cooker.
2️⃣ In a bowl, whisk together apple cider vinegar, lime juice, olive oil, cumin, oregano, smoked paprika, chipotle powder, salt, and pepper.
3️⃣ Pour the mixture over the beef.
4️⃣ Add chopped onion, garlic, beef broth, and bay leaves.
5️⃣ Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours, until the beef is fork-tender.
6️⃣ Remove the beef, shred with two forks, then return it to the slow cooker to soak up the juices. Remove bay leaves before serving.
Pile onto warm tortillas/lettuce wraps and top with fresh cilantro and a squeeze of lime. Delicious with avocado, onions, or a little salsa on the side.
