If your GLP-1 meal rotation is feeling repetitive, this cilantro lime chicken salad is your new go-to.
Cilantro Lime Chicken Salad (4 servings)
Ingredients
3 cups rotisserie chicken, shredded
4 baby cucumbers, chopped
1/2 red onion, chopped
15 ounces canned corn, drained
15 ounces black beans, drained and rinsed
1/3 cup fresh cilantro, roughly chopped
Cilantro Lime Dressing:
2 tomatillos
1 serrano pepper
1 avocado
Juice of 1 lime
2 tbsp sour cream
Splash of milk
Fresh cilantro
Salt to taste
Directions:
Blend all dressing ingredients until smooth and creamy.
Chop cucumbers, red onion, and drain corn and black beans.
Add chicken and all veggies to a large bowl.
Pour dressing over everything and toss to combine.
Top with fresh cilantro and serve.
