Day 2 of the CAUSES Culinary Arts Program is underway! We’re learning about food safety and cooking up some egg bites and applesauce pancakes.

Celebrate the start of summer with the crisp, bright flavors of the season! Try this easy, refreshing salad straight from EatFresh.org—perfect for picnics, BBQs, or a light lunch:

Sweet Corn Summer Salad
🕒 Ready in just 10 minutes, serves 4, and packed with vibrant summer produce!

Ingredients:
2 cups corn kernels
1 tomato, diced
1 cucumber, diced
½ red onion, thinly sliced
¼ cup lime (or lemon) juice
1 tbsp olive oil
½ tsp salt, pepper to taste

1. Toss all the ingredients in a bowl until they are evenly coated.
2. Serve immediately , or chill and serve.
