Creamy Rotisserie Chicken Tortellini Soup Ingredients • Meat from 1 rotisserie chicken, shredded • 2–3 handfuls baby spinach • 1 carton chicken broth (32 oz) • 2 cups milk • 1 cup water • 1 (20 oz) package refrigerated tortellini (cheese or pesto) • 1 package instant mashed potatoes (the flakes – this thickens the soup) • 1 pint cherry or grape tomatoes, halved • Salt and pepper, to taste Instructions 1. In a large pot or Dutch oven, add the chicken broth, milk, and water. Bring to a gentle simmer over medium heat. 2. Stir in the instant mashed potato flakes until fully dissolved. This will thicken the soup. 3. Add the shredded rotisserie chicken and tortellini. Simmer according to the tortellini package directions, usually about 5–7 minutes. 4. Stir in the tomatoes and spinach and cook just until the spinach wilts, about 1–2 minutes. 5. Season with salt and pepper to taste. 6. Serve warm and enjoy!
