Halibut nearly done. I just used some good olive oil, a little Goya adobo, fresh ground black pepper, and mango curry salt from Green Leaf in Livermore.

Just hit 160. So juicy there us no need to baste! Wrapped the pieces in foil with au jus and garlic and put them back in the egg.
