Chapped lips could be a sign from your body that it needs more water. This time of year foods that have high water content, like watermelon, are plentiful. Also raw coconut water is a great hydrator with lots of electrolytes. Be sure to protect your lips from the sun when you are out recreating. Coconut oil is a good natural option.

I created this recipe for 4th of July--It's Red, White and Blue Strawberry Shortcake!

The shortcake is made from coconut flour---it's a super easy recipe that can also be used to make blueberry muffins.

Makes 12 shortcakes

Ingredients:
• 6 organic eggs
• 6 tablespoons melted organic coconut oil or butter
• 6 tablespoons raw honey
• 1/4 teaspoon almond extract
• 1/2 teaspoon pure vanilla extract
• 1/4 teaspoon sea salt
• 1 teaspoon baking powder
• 1/2 cup coconut flour
• 1 pound organic strawberries, stemmed and sliced
• 1 cup organic blueberries
• Whipped cream for topping (I whipped my own using organic whipping cream sweetened with a few drops of vanilla stevia)
• Ground cinnamon and sliced almonds, for garnish—optional

Method:
Preheat oven to 400 F. Coat muffin tin with coconut oil or butter.
Blend eggs, melted coconut oil or butter, honey, almond and vanilla extracts, salt, baking powder and coconut flour with a whisk until well blended.
Pour the batter into prepared muffin cups and bake for 16-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in muffin pan for 10 minutes, then transfer to a cooling rack to cool completely.
Slice each muffin in half horizontally, and place sliced side up on a small plate. Serve topped with blueberries, sliced strawberries and a dollop of whipped cream. Add a dash of cinnamon and a sprinkle of sliced almonds if desired.
