Skip the takeout – this Chicken & Veggie Chow Mein is ready in 24 minutes! 🍜

A Very Veggie Chicken Chow Mein
Yield: 4 servings
Prep time: 10 minutes
Cooking time: 14 minutes
Total time: 24 minutes

Sauce Ingredients:
πŸ”ͺ1 tablespoon hoisin sauce
πŸ”ͺ1 tablespoon low-sodium soy sauce
πŸ”ͺ1 tablespoon soy sauce
πŸ”ͺΒΌ teaspoon red pepper flakes

Sauce Instructions:
Whisk all of the ingredients together in a small bowl. Reserve.

Chow Mein Ingredients:
πŸ”ͺ2 packages of ramen noodles, seasoning packed discarded
πŸ”ͺΒ½ teaspoon kosher salt
πŸ”ͺ2 tablespoons olive oil, divided
πŸ”ͺ1 large red bell pepper, cut into strips
πŸ”ͺ1 head baby bok choy (white and green parts divided), thinly sliced
πŸ”ͺΒ½ teaspoon ground white pepper
πŸ”ͺ2 large scallions (white and green parts divided), thinly sliced
πŸ”ͺ1 Β½ cups shredded rotisserie chicken
πŸ”ͺ1 Β½ cups snow peas, trimmed
πŸ”ͺ1 tablespoon freshly grated ginger

Chow Mein Instructions:
1. Bring a medium pan of water to a boil with Β½ teaspoon salt.
2. Add the ramen noodles and cook for 3 minutes.
3. Drain and rinse under cold water.
4. Place the noodles on a large sheet pan and gently pat with paper towels. Reserve.
5. Heat 1 tablespoon olive oil in a large nonstick frying pan.
6. Add the bell pepper and the white stalks of the bok choy to the pan, then season with pepper.
7. SautΓ© for 5 minutes, or until softened.
8. Add chicken, snow peas, bok choy greens, scallion greens, and ginger to the pan.
9. SautΓ© for 2 minutes, or until the greens are wilted and the snow peas are bright green.
10. Spoon mixture onto a large platter and tent with foil to keep warm.
11. Add the remaining olive oil to the pan, then add the cooked noodles. Let them sit in the hot pan for 2 minutes without moving them, so they crisp slightly. Flip, and cook for an additional 2 minutes.
12. Pour in the sauce and add the cooked vegetables and chicken back to the pan.
13. Stir well until warmed through.
14. Serve immediately and enjoy!

Storage: If you have any leftover chicken chow mein, store it in an airtight container in the fridge for up to 3 days.
