As a girl with Texas roots in her blood, I grew up knowing about Juneteenth way before it was ever declared a National Holiday. And to be honest, the truth behind the story has always saddened me more than given me reason to celebrate. But one day, a new perspective came to mind! Iโll never forget the day I was driving home from work and the dedication for Meals You Deserve came to mind like a bolt of lightning! It immediately even brought tears to my eyes because, while a simple sentence, the statement holds so much weight and causes one to acknowledge all of what it speaks to: 1) the foundation, literally and figuratively, of many of the nutrient-rich foods and dishes that we eat today, 2) the creativity of recipes made from โscrapsโ that are now cherished, treasured, passed down, and even listed on some of the finest restaurant menus, and 3) the empowerment of being able to return to foods grown on land once worked by their barehands and find delicious solutions to health issues 4) to now be able to prosper from itโฆ its as if itโs a beautiful return on their forced investment. I do not take this freedom for granted.

PINEAPPLE MANGO SMOOTHIE POPS!!! ๐๐ฅญโจ I dedicate this recipe to all my peeps in Cali where the temps have been in the triple digits and not letting ๐๐ฅต๐โฆNeed a sweet treat to cool down from the heat? Made with only a few simple ingredients, these luscious pineapple mango smoothie pops make for the perfect summer treat for the whole family (I personally tested and theyโre kid-approved). As a time saver, you can use thawed out frozen fruit. Makes a dozen pops!
INGREDIENTS:
๐ฅญ16 oz chopped mangoes about 2 cups chopped
๐ฅญ 16 oz chopped pineapples
๐ฅญ 1 C water
๐ฅญ 1 lime, the juice of
๐ฅญ 2 tbsp honey, or more as desired
๐ฅญ ยผ tsp turmeric
DIRECTIONS:
In a high speed blender, add water first. I prefer to place liquids first as it seems to make for better blends.
Next, add remaining ingredients and blend on high until you have a beautiful, silky smoothie texture!
Pour smoothie mixture into your popsicle molds and allow to freeze for an hour before inserting popsicle sticks.
Continue freezing for at least 5 more hours or overnight. Enjoy!
