Zesty, refreshing, and satisfying 🫶 This Cobb Pasta Salad features a green goddess dressing loaded with fresh flavors from parsley, chives, and tarragon. Ronzoni Protein Rotini, eggs, and chicken add plenty of protein to make this pasta salad a full meal!
INGREDIENTS:
For the Dressing:
3/4 cup mayonnaise
3/4 cup sour cream
2 Tbsp fresh lemon juice
2 anchovy filets
1/2 cup flat-leaf parsley
3 Tbsp chopped chives
2 Tbsp chopped tarragon
1 tsp. Kosher salt
2-3 Tbsp water to thin dressing, if desired
For the Pasta Salad:
Kosher salt
12 oz. bacon, chopped
1 lb. chicken tenders
12 oz. Ronzoni® Protein Rotini
1/2 seedless cucumber, chopped
1 1/2 cups cherry or grape tomatoes, halved
1-2 large avocados, seeded, peeled, and chopped
3 hardboiled eggs, chopped
3 oz. crumbled blue cheese or feta
RECIPE:
Blend dressing ingredients and refrigerate.
Cook bacon over medium heat until crispy and brown, about ten minutes.
Use leftover chicken or grill your own over medium-high heat until just cooked through, around 3-4 minutes per side. Cut into small chunks.
Cook pasta according to package directions. Rinse and drain well to cool.
Add ingredients to a large serving bowl. Drizzle with dressing and mix well. Enjoy!
