This was dinner…. Someone mentioned that it was high in carbs. I thought I did good. Am I wrong? I’m new to this.
Red, yellow and orange peppers, zucchini, broccoli, asparagus, mushrooms and sausage.
I put them all together in a bowl and tossed in EVOO and placed them in a single layer on the pan. I sprinkled garlic powder, chili powder, Mrs dash onion & herb and Mrs dash vegetable seasoning on them. Baked @ 400 for 8 minutes, flipped everything and baked another 8 minutes. Veggies were done, but still crisp and not soggy.

Sweet Potato, Avocado & Jammy Egg Power Bowl

Ingredients:

1 medium sweet potato, sliced into ¼-inch rounds

1 tsp olive oil

Salt & pepper to taste

1 ripe avocado, diced

2 eggs

Instructions:

Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, salt, and pepper. Roast for 20–25 minutes until tender.

Boil eggs for 7 minutes for jammy yolks. Cool in ice water, then peel and halve.

In a bowl, layer roasted sweet potatoes, diced avocado, and halved eggs.

Drizzle with olive oil or your favorite dressing. Enjoy!

Keto Candy Bars: A Sweet Treat That's Guilt-Free!

Ingredients:
1 cup almond flour, 1/2 cup unsweetened cocoa powder, 1/2 cup erythritol or another keto-friendly sweetener, 1/4 cup coconut oil, melted, 1/2 teaspoon vanilla extract, 1/4 teaspoon salt, 1/4 cup sugar-free chocolate chips (optional)

Directions:
1. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
2. Add melted coconut oil and vanilla extract to the dry ingredients, mixing until combined.
3. Press the mixture into a lined baking dish, spreading evenly.
4. If using, sprinkle sugar-free chocolate chips on top and press them into the mixture.
5. Chill in the refrigerator for at least 30 minutes to firm up.
6. Cut into bars and enjoy your keto candy!

Preparation time: Approximately 15 minutes. Chill time: 30 minutes.

Nutritional values: Each serving (roughly one bar) contains about 150 calories, 12g fat, 5g protein, and 8g net carbs.
