Tomorrow is World Baking Day. And for this , why not start it off right with a hot breakfast based on, Nadiya Hussain's all-American peanut butter and jam oven pancake tray-bake.
This quick and tasty peanut butter and jam tray-bake made with pancake batter, adapted for use with our own sourdough pancake recipe, is a winner for sure.
It calls for a few heaping tablespoons of jam (your choice) and peanut butter (crunchy or smooth), a bit of cooking spray, all-purpose flour, baking powder, salt, sugar, whole milk, a couple of eggs, a few tablespoons of vegetable oil and an optional bit of powdered sugar for dusting. She recommends it be served "with an extra dollop of jam, some Greek-style yogurt, and fresh raspberries on the side."

In the USA, the name "cracker" most often refers to salty or savory biscuits, but in Britain, crackers might be less salty and called water biscuits or savory biscuits, both of which were born out of necessity for food that would keep well on naval vessels centuries ago.
Either way, today, , is a good day to highlight sourdough crackers by making and baking a batch. And honestly, nothing could be easier to make than these crackers built on a base of your sourdough discard. See Martha's recipe here: https://yoursourdoughstart.com/cracker-day-meets-crackerday/

Each year on April 25th encourages us as sourdough bakers to make this delicious bread. However, that means buying the Zukes as it is a bit yearly for the garden variety.
This delicious whole grain recipe from King Arthur Baking Company "…makes wonderful use of excess sourdough starter you might otherwise discard." And if it was just summertime with its "…avalanche of zucchini, it [would be] one loaf that solves two kitchen conundrums," they promise.
