Trying out some gluten-free low carb high protein waffles! These turned out great and I topped them with a some left over mascarpone cheese and a little blackberry jam for a treat. My kids liked them too! These are a great option for maintaining blood sugar and sustaining you through a busy morning! Recipe: 2 eggs, 1/2 cup almond meal, 1/2 cup chickpea flour, 1/2 cup unflavored protein powder, 1 tsp vanilla extract, 2 tsp baking powder, 1/4 cup milk (can use a milk alternative!) and 1 tbsp of a sweetener or sweetner alternative ( I used maple syrup). Mix the wet and dry ingredients separately and then mix them together and make your waffles!
