Somedays we just CAN’T even think about dinner. So I grabbed what I could and tried to make something out of not much.

Recipe -
4 thin SLICED chicken bewbs
Salt+Pepper+Garlic Powder or
2 Sweet Potatoes, peeled and cubed
1 Onion, Cut into Wedges
2 Carrots, peeled and cut on the bias
1 Bell Pepper, cored and thinly sliced
2 Green Onion/Scallions, thinly sliced (whites for pan sauce, greens for finished dish)
Olive Oil for pan + Veggies
1/4 cup Hoisin
1/4 cup Low Sodium Chicken Stock
1/4 cup Sweet Chili Sauce
1-2 Tbsp Low Sodium Soy Sauce or Coconut Aminos
1 tsp Sesame Oil
Minced Cilantro, garnish
Sesame Seeds

Heat oven to 425, toss all veggies in olive oil and season. Roast about 20-25 min til crispy edges form.
Heat cast iron pan, add oil and brown chicken on both sides. Allow the chicken to release naturally from pan! Set aside and cover to rest.
For sauce, add in onion whites. Deglaze with chicken stock. Stir together hoisin, sweet chili, and soy. Lastly add sesame oil.
Plate and top chicken with hoisin pan sauce. Happy Cooking!
