Dumplings
1/2 pound ground chicken
1/2 pound ground pork
1 cup minced cabbage
3 green onion pieces minced
4 minced garlic cloves
1 tbsp minced ginger
1 tsp sesame seed oil
4 tbsp soy sauce
1 tbsp mirin
1 tbsp chinese cooking wine
1 tbsp red wine vinegar
1 tsp oyster sauce
1 tsp chicken broth powder
1 tsp sugar
1 tsp salt
1 tsp white pepper powder or black pepper
1 package dumpling/potsticker wrappers
In a cup mix together soy, mirin, wine, vinegar, oyster sauce, oil, sugar, salt, pepper and broth powder set aside.
If you are able to grind your own meat i suggest to do so as it will be fresh and you can add more fat to the mixture. This will make it juicy.
In a large mixing bowl add the meat, cabbage, garlic and ginger. Take a wooden spoon and begin mixing clockwise. once fully mixed begin slowly adding the wet ingredient mixing in a clockwise direction. This will turn the mixture into a smooth texture which binds together well.
Place the mixture in the refrigerator for 30mins to an hour to marinate. This is optional but the flavor will increase!
Take your wrappers and begin filling your dumplings! seal with a egg wash mixture.
In a large skillet add 3 tbsp oil and brown the bottom of the potstickers, pour in approximately 1 to 1 1/2 cups water and cover with a top. Cook for 5-7mins and serve.
Taco seasoning Idea...
Take some carne asada or london broil or whatever you want and cut it into small chucks. Marinate it in 4-5 tablespoons olive oil, 3-4 tablespoons soy sauce, 1 tablespoon salt, juice from half a lime, 4 to 5 garlic cloves crushed and minced, 1/2 tsp cumin, 1/2 tsp chipotle powder. Mix it all up let sit 5mins or overnight, heat up a saute pan smoking hot and cook until all water is reduced out.
