Historically, the kouign amann (which is pronounced “queen ah-MAHN”) has been baked in individual portions, akin to a croissant. This regional specialty of Breton features croissant dough laminated in salted butter and rolled in sugar.
Fast forward to Montreal in the late 20th century: A new style of kouign amann emerges: the giant round, served in slices of delicately folded, buttery, salted dough. Patrons often accompany the early morning treat with coffee and blissed-out smiles.
