🌺 Hibiscus Tea with Bay Leaf & Cinnamon

Ingredients:
• 2 tablespoons dried hibiscus petals
• 2–3 cups water
• 1 small cinnamon stick
• 1–2 dried bay leaves
• 1–2 tablespoons honey or sugar (adjust to taste)
• Optional: 1–2 slices lemon or a splash of lemon juice
• Optional: a few cloves or a small piece of ginger for extra warmth



Method :
1. Boil the water
• In a saucepan, bring 2–3 cups of water to a boil.
2. Add spices
• Add the cinnamon stick and bay leaves.
• Let them simmer for about 5 minutes to release flavor.
3. Add hibiscus
• Add the hibiscus petals (or tea bags).
• Turn the heat down and let it steep for 5–7 minutes (longer if you want a stronger, more tart tea).
4. Sweeten
• Strain the tea into a cup or pitcher.
• Stir in honey or sugar while it’s still warm.
5. Add optional flavors
• Add lemon juice or slices for brightness.
• Chill in the fridge for iced tea, or serve warm.



💡 Tips:
• For a more intense flavor, use less water or steep longer.
• For a lighter, smoother taste, add a bit more water or dilute after brewing.
• This tea is naturally rich in antioxidants and is often enjoyed hot or cold.

Spicy Zoodles with shrimps
Ingredients
For the Zoodles
* 1 medium zucchini
* 1 tablespoon olive oil or sesame oil
* Salt, to taste

For the Sauce
* 2 tablespoons soy sauce
* 1 tablespoon sriracha (adjust to taste)
* 1 tablespoon rice vinegar
* 1 tablespoon honey or maple syrup
* 1 teaspoon sesame oil
* 1 clove garlic, minced
* 1 teaspoon fresh ginger, mince

Make the Sauce
1. In a small bowl, whisk together soy sauce, sriracha, rice vinegar, maple syrup, sesame oil, garlic, and ginger. Keep aside

Prepare the Zoodles
1. Spiralize the zucchini and place it in a colander.
2. Sprinkle with salt and let sit for 10-15 minutes to draw out moisture.
3. Rinse and pat dry.

Cook the Zoodles
1. In a pan, add olive oil or sesame oil over medium heat.
2. Add garlic fry till fragrant then add zoodles and sauté for 2-3 minutes until just tender but still crisp, dish out
Cook Shrimps
1. In a pan add tsp of sesame oil add 1 crushed clove of garlic fry till golden add the shrimps fry till they change color slightly golden add 1/2 tsp fish sauce ( optional) fry for few seconds add the prepared sauce mix well till it starts turning glossy & thicker immediately pour over the Zoodles
Serve immediately

Raisheydar Chicken Shami kebabs
Ingredients
For cooking chicken
* Chicken Boneless 1 1/2 lbs thighs/ breast
* Chana dal 1 cup soaked overnight
* Onion 1 sliced
* Garlic 2-3 cloves peeled
* Ginger 1” piece sliced
* Coriander seeds 1 tblsp
* Cumin seeds 1/2 tsp
* Black pepper corn 1 tsp
* Cinnamon 1” stick
* Cardamom black 2 pcs
* Cloves 1/2 tsp
* Red chilies whole 8-9
* Salt 1 tblsp adjust
* Water 1 1/2 cup
For kebabs
* Cilantro 1 bunch chopped
* Mint 2-3 tblsps chopped
* Green onion 1 finely sliced
* Green chilies 1-2 finely chopped
* Breadcrumbs 1 cup
Or
* 2 eggs
* Khushkhash 1 tblsp ( poppyseed )

Method
1. In an instant pot add water daal, chicken and all the spices turn on to saute settings and bring it to boil.
2. Cancel the saute settings and turn on pressure cook for 15 -18 minutes
3. Let it auto release ( I went to sleep 😴)
4. If there’s water in then Take it out and cook for another 5-10 minutes until water is completely dried also
5. Use potatoes masher to mash fall and chicken ( here’s when the magic happens) don’t use blender
6. Once water dries take out in a deep bowl and let it cooldown completely down completely
7. Add all the greens, khush khush and masala’s add eggs or breadcrumbs
8. Mix well then shape the kebabs
9. Place them on plate / tray to freeze
10. Once freezes transfer in an airtight container.
11. When you need to fry take out as many microwave for 36/45 seconds then
12. Shallow fry these on medium heat till golden crispy
13. Serve with your favorite green Chutney
14. Enjoy
