Looking for an easy plant based recipe that’s super quick to make and easy on the budget? Try a tofu bowl! 🍲
Ingredients
5-6 Ounces of Firm Tofu
½ Cup Broccoli 🥦
½ Cup Quinoa 🍚
Handful of Alfalfa Sprouts 🥬
Vegan mayo or cashew cheese 🧀
2 TBSP Cornstarch
1 TSP Onion Powder 🧅
1 TSP Garlic Powder 🧄
1 TSP Salt 🧂
Instructions
Mix together the seasonings and cornstarch in a small bowl. Chop firm tofu into bite size pieces and coat with cornstarch mixture. Heat a saucepan with olive oil and add in tofu bites. While the tofu is cooking, steam the broccoli either in the microwave or stovetop and cook the quinoa. Continue to turn the tofu until it’s golden brown. Once the veggies and quinoa are finished cooking, put the grains in a serving bowl alongside the broccoli. Add in the tofu and vegan mayo. Top with the sprouts. Enjoy!💫

💙 Blue Monday was originally created to spark the tourism industry. During a PR campaign to spark tourism. It was said that the third Monday of January is the saddest day, since some are in freezing temperatures, are in debt from Christmas, and New Year’s Resolutions are already being broken. 💙
So, in honor of Blue Monday, I wanted to give you some tips on how to rid yourself of those winter blues.

Workout - working out releases those feel good hormones, so get moving! 🏋️
Breathe - Stay in your present moment by taking breaks to mindfully breathe in and out. 🌬️
Revisit your New Year’s Resolution - Remember why you started and keep going! 💪
