In the 1950s, the Eastern Sour took the bones of a whiskey sour and pulled them into tiki. Born at Trader Vic’s in Oakland, the classic set rye or bourbon against orange, lemon and orgeat, proving that rum wasn’t the only spirit with a place beneath the palms.
At Dr. Funk, EAST MEETS WEST pushes the classic deeper into tiki. We trade the original’s orgeat and simple syrup for falernum and honey, keep Sazerac Rye 100 Proof at its center, then crown it with a Worthy Park 109 float that brings the unmistakable edge of Jamaican rum.

Before the Saturn became a tiki classic, it broke the cardinal rule: MUST CONTAIN RUM.
Created in 1967 by Filipino bartender J. “Popo” Galsini, the gin-based mix of passionfruit, falernum, orgeat and citrus won the International Bartenders’ Association World Championship. Decades later, Beachbum Berry rediscovered the recipe and the drink found its way back onto menus around the world.
Dr. Funk now introduced SATURN IN RETROGRADE 🪐 We’ve sent the classic into a new orbit. Clarified with coconut milk, the famously tropical drink emerges unexpectedly crystal clear and takes on the silky, rounded mouthfeel of a milk punch. Suncliff Gin, falernum, passionfruit and from-scratch orgeat remain at its core, reimagined with an entirely new appearance and body.

In the early-2000s Chartreuse was more than a bottle behind the bar, the intensely herbal green elixir had a devoted following among bartenders, and Marcovaldo Dionysos was one of its truest believers.
Intrigued by Velvet Falernum, a Caribbean spice syrup that had nearly vanished from cocktail culture, Dionysos used it to pull Green Chartreuse, the centuries-old French herbal liqueur, into the realm of tiki. Pineapple, lime, mint and crushed ice softened Chartreuse’s formidable edges without muting the character that made bartenders obsess over it in the first place.
Winning a competition in 2003 was only the beginning. The CHARTREUSE SWIZZLE spent the next decade on a hard-won climb from San Francisco menus to bars around the world, gaining international legs by 2010, earning its place as a modern classic. More than two decades later, it has landed on the menu at Dr. Funk. 💚 As Dionysos says, “Chartreuse is magical stuff.” We tend to agree.
