Ingredients:
1 head of broccoli, chopped into florets
2 medium carrots, chopped
1 red onion, sliced
1 red bell pepper, chopped
2 tablespoons olive oil

Salt and black pepper to taste
Instructions:
Preheat your oven to 400°F (200°C).
Toss the chopped broccoli, carrots, onion, and bell pepper in a large bowl with olive oil, dried herbs, salt, and pepper until everything is evenly coated.
Spread the vegetables in a single layer on a large baking sheet. Do not overcrowd the pan.

Spicy Coconut Lime Chicken 🌶️🥥🍋
Ingredients:
2 boneless, skinless chicken breasts
1 can (13.5 oz) coconut milk
2 tbsp lime juice (freshly squeezed)
1 tbsp lime zest
2 garlic cloves (minced)
1 tsp ginger (grated)
1 tbsp soy sauce
1 tsp honey
1 tsp red chili flakes (adjust to taste)
1 tbsp olive oil
Fresh cilantro for garnish
Instructions:
1️⃣ In a bowl, mix coconut milk, lime juice, zest, garlic, ginger, soy sauce, honey, and chili flakes.
2️⃣ Place chicken breasts in the marinade and let sit for at least 30 minutes (or overnight for deeper flavor).
3️⃣ Heat olive oil in a pan over medium heat and cook chicken for about 6-7 minutes on each side until golden brown and fully cooked.
4️⃣ Pour the remaining marinade into the pan and let it simmer for 5 minutes.
5️⃣ Garnish with fresh cilantro and serve with rice or steamed veggies!
