Now available in limited release (by appointment, drop an email). This is "Nire Aitona" Basque for my "My Grandfather". This is a Basque style cheese from the mountainous area between France and Spain. The flavor is more subtle than our other raw sheep milk cheese, the texture softer. Named in honor of Vicky and Jeff's grandfather's. Vicky's was the first of 3 generations (so far) of cheese makers and Jeff's grandfather hauled milk in cans " back in the day".
