We had a nice day trip exploring state parks and small towns in Missouri today.

We live in a wonderful state full of natural beauty and quaint little towns. Thankful to be raising my kids in the Ozarks!

If you haven’t done day trips to any of our natural areas, take this as your nudge to do so. If you don’t know where to start, reach out and I’ll tell you my top picks for day trips!

Guys, I made this without following a recipe, without checking on it, and without even thinking about it. Just going off the feel of the dough and then randomly remembering it existed. 😂 No special tools to mix, just flour, water, salt, and starter. I have arrived 😎😂

This is your friendly reminder not to overthink sourdough. Get off TikTok and just come to my class if you want to learn a simple way to do sourdough consistently! I have had so many people leave the class and keep successfully baking on their own. I am so proud of them!

The next class is on August 29 from 9-12. Registration opens the 29th of July. You can’t sign up yet, but if you drop a comment below, I will send you the signup form on July 27, before I open it to the public.

We need 20 people to run a class, and it will be capped at 24 students. We already have 7 who want the form early, which is awesome bc I LOVE teaching this. There is a bring-a-friend discount so invite your friends.

This is your chance to have a fun 3 hour outing right here at in Rolla at The Village - Weddings & Events! It is 2 hours of hands on learning, broken up with an hour brunch, which is all made from scratch by us.

You will come home with everything you need to keep baking at home-tools, recipes, starter, and a support group. Let me know if you are interested, and scroll to see some of the awesome texts I’ve gotten from former students!

Don’t forget we are closed this week and reopening June 12. I can’t wait to be back to baking for you guys!

THANK YOU! Thank you to all the people who came to the concession stand to buy food and support the kids showing.

Thank you to Kayla Heavin for all the help with prep, showing up to my house at 5 am (where I was whisking gravy with both hands 🤣)
to help, and being my right hand man in that tiny concession stand. You guys should’ve seen the amount of gravy we had in her car. Each pot filled to the brim that had us taking each turn like this.😬

Thank you Tonya De Luca Lewis and Crystal DeLuca Lynch for the hours you spent making biscuits for the fair, even if I did have revoke Tonya’s buttermilk privileges because of her free spirited approach to baking. 😂 Also, Travis Lynch, idk how you were always right where I needed you when I needed you, but glad you were.

Thanks to Remi Eats for your donations. I know you like to serve quietly, sorry-and not 🤣- I keep shouting you out.

Thank you to everyone who works so hard to make the Phelps County Fair possible. We are thankful for something fun to do and a place to showcase our animals.

Finally, huge shoutout to every single person who volunteers to make 4-H clubs possible. It’s an amazing thing for kids and the community. Thank you Ashley Berry, Rachel Cook, and Emily Turner Anderson for all the countless hours, mostly unseen that you put into the fair and making Young Riders possible.

Thanks to anyone I missed, and there are many. It’s nice to know so many amazing, giving, and hard-working people. 🥹

Finally, I hope you enjoyed the biscuits and gravy and the various grilled cheeses we slung out of that primitive concession stand. 🤣🤣🤣

We are so happy we got to help those who have helped us so much over the years, and we are also so tired. 😂 Can’t wait to recharge next week and be back to business as usual June 12!

Tomorrow morning starting at 7:30 am, we have breakfast in the livestock barn. Homemade biscuits and gravy!

We also have lunch: smoked pulled pork sandwiches, smoked chicken breast sandwiches, and grilled cheese: it’s on 3 of our homemade breads!

Come check out the livestock barn if you come to the fair. We will have our cookies and brownies for dessert too!

The Phelps County Fair is almost here, and I want to share what that really means, because I didn’t even understand it myself until 4 years ago when we joined 4-H.

I grew up here and never even went to the fair. My family always thought, “That’s for country people, that’s not us.” So I carried that same idea for a long time. Then we got involved in 4-H, and my perspective completely changed.

What I found was far more than livestock shows and tractors and rides. I found kids learning responsibility, leadership, teamwork, work ethic, public speaking, and service. I found volunteers giving their time so local youth can grow, learn, and succeed. I found a community building something meaningful together.

The entire fair and 4-H program are volunteer run. The kids involved help clean the fairgrounds, work in the concession stand, assist younger kids, care for animals, and take pride in giving back. They learn skills they will carry for life while being part of something bigger than themselves. Did you know kids who grow up in 4-H are SEVEN times more likely to volunteer as adults?! 🤯 That’s a mentality that will change a community for the better!

This is also a community-funded event, not a taxpayer-funded one. The fair exists because of local families, businesses, sponsors, and volunteers who continue to show up and support it year after year. If the community doesn’t come out and support the fair, it simply cannot continue.

With more than 700 farms in Phelps County, agriculture remains an important part of our community and our future. But you do not have to be a farm kid to enjoy or benefit from the fair or 4-H. There really is something for everyone.

There is:
• Brand new 4-H focused dog show
• Livestock shows and events
• Educational opportunities with Back Country Horsemen featuring conservation, trail cleanup, and native plants
• Free gospel singing Wednesday night
• Rodeo Thursday night
• Tractor Pull Friday night
• Demo Derby Saturday night
• Home Arts entries and exhibits
• Kids games every night of the fair
• Contests for all ages with prizes awarded
• Pie eating contest with two divisions so everyone can participate

That’s a solid 3.5 days of entertainment for only $30 a person (if you get a season pass before it starts!) As a budget conscious person, I think that’s a huge bang for your buck!

Whether you come for the animals, rides, food, education, entertainment, or just a good family night out, I hope you’ll come see what the fair is really about. Support the kids, support the volunteers, and support a tradition that gives so much back to our community.

Thank you for coming this week!!! We appreciate you all, and we love getting to bake for you.

We are closed today and will remain closed until June 12.

If you stocked up on bread, here are screenshots of how to rewarm it. I keep artisan loaves in the freezer either sliced in a freezer bag so I can pull out what I need, or whole (also in a freezer bag) so I can rewarm the entire loaf and enjoy it like it is fresh baked.

You can rewarm bread, even the same day you get it, by running it under water and popping it in the oven! You will feel insane just sticking your bread under a running faucet but it works!! 😂

Last week, I set a loaf aside for us and forgot about it for the entire week! When I found it stale, I ran it under the faucet, put it in the oven, and it came out just like fresh baked. Sourdough is awesome!

That said, do not leave bread on the counter for a week right now. 🤣 It is humid and warm, so the bread will mold, especially the cheese breads. With no preservatives, it is important to be mindful so you do not lose any loaves to mold.

My general rule is to leave it on the counter the day I get it and the next day. Then I slice it, put it into a freezer bag, and pull out slices as needed for sandwiches. I do this with the artisan loaf unless I want to serve one whole with a meal.

With the James loaf, I either freeze it sliced for toast or leave it whole. I let the whole loaf come to room temperature on the counter and use it for sandwiches. It still tastes remarkably fresh not toasted!

Being mindful with my bread and freezing it to use is how I was able to stop buying store bought bread for my family six years ago.​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​​

I hope this helps you with your fresh bread, it’s worth the hassle! I loved seeing so many of you stock up this week saying you can never go back to store bought bread. That’s how we feel too! 🙌🏻
