Okkkk listen up because this is hands down one of my top five favorite salad recipes 🙌🏼 quinoa tabbouleh salad 🫒🍅🥒🍋🥗
The great thing about quinoa is it is a GREAT source of protein if you are plant-based. This salad is great hot or cold (I always make the quinoa and then cool it for a few hours before adding all the veggies).
• 2 cups cooked quinoa
• one large seedless cucumber, cut into quarters
• 1 pint grape or cherry tomatoes, halved
• handful or two of kalamata olives, chopped
• 1/4 cup parsley, chopped
• juice of 1 lemon
• good dose of olive oil or avocado oil
• feta cheese (can make it vegan without!)
