Fresh Peach Crumb Bars
This is the perfect recipe for peach season, it’s like cobbler on crack. So chewy and perfectly crumbly, I wouldn’t eat these in bed 🤭

Let me know how you like it:
1. Preheat oven to 350 degrees F and lightly grease 13x9 inch pan or cover with parchment.
2. Put cubed butter in freezer until ready to use.

For the crust:
1. In a medium bowl whisk dry ingredients.
2. 2. Using a pastry cutter, blend in the butter until mixture resembles sand.
3. Add lightly beaten egg and mix until dough starts to hold together, but is still crumbly.
4. Gently press half of dough into prepared pan.

For the peach filling:
1. In a large bowl, whisk cornstarch and cinnamon.
2. Add diced peaches and toss. Drizzle lemon juice over and toss to coat. Add more cornstarch if it’s still very runny.
3. Pour peach mixture over crust and spread.
4. Using your hands, press together handfuls of remaining crumble to create clumps. Scatter clumps and remaining loose topping over the fruit layer, leaving some peaches peaking through. (See video)

To finish:
1. Bake for 55 minutes, or until lightly browned. Let cool completely before removing from pan or cutting.
2. Prepare icing: whisk powdered sugar, almond extract, and milk.
3. Drizzle icing on bars just before serving. Enjoy!
