Stuffed Chicken with Quinoa and Serrano Pepper Sauce
Ingredients
For the Stuffed Chicken:
2 large chicken breasts
1/2 cup cooked quinoa
1/4 cup diced onion
1 garlic clove, minced
1/4 cup roasted red paprika, diced
1/4 cup shredded mozzarella or cream cheese (optional for creaminess)
Salt and pepper to taste
1 tablespoon olive oil
For the Sauce:
1 Chile Serrano, finely chopped
1/2 cup chicken broth
1/4 cup heavy cream (or coconut milk for a dairy-free option)
2 garlic cloves, minced
1 teaspoon smoked paprika
Juice of 1 lime
Salt and pepper to taste
For the Side:
2 medium potatoes, boiled and mashed
1 tablespoon butter (or olive oil)
1/4 cup milk (optional for creaminess)
Salt and pepper to taste
1 medium cucumber, thinly sliced (for garnish)
Instructions
1. Prepare the Stuffed Chicken:
Preheat your oven to 375°F (190°C).
Butterfly the chicken breasts (slice horizontally without cutting through) and season with salt and pepper.
In a small bowl, mix the cooked quinoa, onion, garlic, diced paprika, and mozzarella/cream cheese (if using). Adjust salt and pepper.
Stuff the chicken breasts with the quinoa mixture and secure with toothpicks or kitchen twine.
Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for 2–3 minutes on each side until golden.
Transfer the skillet to the oven (or place the chicken in a baking dish) and bake for 15–20 minutes, until the chicken is fully cooked (internal temperature of 165°F/74°C).
2. Make the Sauce:
In the same skillet (or a saucepan), sauté the minced garlic and chopped Chile Serrano over medium heat for 1–2 minutes.
Add chicken broth, smoked paprika, lime juice, and cream. Stir well and simmer for 5 minutes until slightly thickened. Season with salt and pepper to taste.
3. Prepare the Mashed Potatoes:
Mash the boiled potatoes with butter and milk (if using). Season with salt and pepper to taste.
Keep warm until ready to serve.
