This is exactly why I rarely eat out anymore 😋

The perfectly crisp, lightly caramelized crust on the outside… the incredibly tender, juicy, melt-in-your-mouth center on the inside… this is what filet mignon is supposed to be.

Yes, it’s considered one of the more expensive cuts of beef, but it’s still far less expensive than ordering it at a restaurant. And if you’ve purchased a whole, half, or quarter of a cow where every pound costs the same regardless of the cut, enjoying a filet like this at home becomes an even better value.

Unless I’m traveling or too far from home to cook, I’d rather make a meal like this. It’s more delicious, more nourishing, more satisfying, and often costs a fraction of what we’d pay for a similar meal at a restaurant.

If you want perfect pan-seared filet mignon, here’s how I make it:

✨ Pat 2 filet mignon steaks dry and let them come to room temperature for 30–45 minutes.
✨ Rub with olive oil and season generously with sea salt and freshly ground black pepper.
✨ Heat a stainless steel skillet over medium-high heat until very hot.
✨ Add a little olive oil and sear the steaks for 3–4 minutes without moving them.
✨ Flip and cook another 3–4 minutes.
✨ Add 2 smashed garlic cloves, fresh rosemary, and fresh thyme. Spoon the warm olive oil over the steaks for the final 1–2 minutes.
✨ Remove when they reach 130–135°F for a perfect medium-rare, then let them rest for 5–10 minutes before serving.

Simple ingredients. Incredible flavor.

Cooking at home gives me complete control over the quality of the ingredients, the oils used, the seasonings, and the portion sizes. It’s one of the easiest ways to support your health while saving money.

Healthy food doesn’t have to be bland, complicated, or expensive. Sometimes it’s as simple as a beautiful steak, fresh herbs, good olive oil, and a few wholesome sides.
