Roasting vegetables is a healthy and easy way to add veggies to a meal. Just chop your veggies into bite-size pieces, toss (frozen or fresh) with some olive oil and spices, spread out on a baking sheet, and bake at about 400℉ until they are slightly charred and easy to poke with a fork.
Different types of vegetables can take longer than others. Usually your veggies will need to bake for 20-40 minutes.
