đ„ Ask the Chef
Q: Whatâs your ideal summer dinner party menu?
A: When I host summer parties, I like to stay out of the kitchen once guests arrive and keep things relaxed and effortless. That means leaning into make-ahead dishes that can be served cold or at room temperature, so Iâm not stuck cooking while everyone else is enjoying the evening.
In the summer heat, food safety is just as important as flavorâespecially with anything served outside. Iâm careful with time and temperature, and I tend to skip mayonnaise-based salads in favor of lighter vinaigrettes and oil-based dressings that hold up better outdoors.
A perfect menu might start with Grilled Vegetable Salad with Lemon and Herbs, Bruschetta with Goat Cheese, Heirloom Tomatoes and Basil, and a Tortellini Pasta Salad with Salami and mini fresh mozzarella. Then Iâll move to a simple but impressive grilled main like Ribeye Steak with Red Chimichurri, Cedar Plank Salmon, or Shrimp with a Compound Butter.
And for dessert, nothing beats the best part of summerâhomemade ice cream.
