Hey, Vegan Food Truck & Pop-Up Entrepreneurs...I'd LOVE your feedback...
🐾 THIS IS NOT A SALES PITCH; I'M GATHERING INFO....
🌱💚 I want to offer a three-month business incubator for vegan food trucks and pop-ups to help them run more profitable businesses.
It truly saddens me every time a vegan entrepreneur has to close their business. That's why I want to help them thrive. 🌻
Here is what I'm thinking for the vegan Food Truck & Pop Up business incubator:
🌱These are the types of things I'd like to include (but I'd LOVE feedback on other topics that would be more important to cover)
1. Pricing & Menu Offerings (inventory, overhead, competition, etc.)
2. Labor (hiring, taxation, laws, capacity, reducing owner hours, etc.)
3. Financial tracking, payments, lowering credit card debt, cash flow, emergency funds, tax prep, etc.
4. Marketing & Sales (opportunities, challenges, platforms, creating alliances, branding, AI, etc.)
5. Financial Goals and projection (I know, not the sexiest thing, but soooo important)
6. Debt reduction - loans, taxes, unpaid vendors, etc.
BTW - The incubator will be for those who are currently running these types of businesses or want to.
🌻 There is so much to cover that a four-month or more intensive program might be necessary to cover it in depth. Or it could be better to break this into a phase 1 and 2.
I want to be mindful of the hours needed IN your business while we work ON your business.
We will meet on Zoom. If all the sign-ups are in the Portland area, we can do a hybrid of online and in-person meetings.
MORE feedback needed.... Which day(s) of the week would be ideal and at what time? Early morning? Evenings, like after 7pm? Mondays? Tuesdays? Some other day? I'm thinking winter is probably the slowest for food trucks, so I'm shooting for winter. Any thoughts?

I was interviewed by the fabulous Virginia Elder on her podcast Reaching Abundance
Do you identify as having an abundance mindset? I never gave that concept any thought until I started hearing it a few years ago. To me, abundance has always been squirreling things away, keeping every old and broken thing...just in case....you never know when you need an odd 2-hole pearlized button, or a random screw that was left over after building something from IKEA. To me, abundance was having extra food in my pantry in case the Zombie Apocalypse came....including a 5-pound bag of uncooked kidney beans......you could suck on them if the power went out).
However, I learned that having an abundance mindset is the total opposite. I really didn't think I had one of those....but you know what I do have....lots of tiny soaps and shampoos from hotels (actually I don't anymore, my husband tossed out my stash....some of it was older than a 9th grader)
It took the Abundance Whisperer (that's my label for her), Virginia Elder to bring it out of me! And she had to work hard!!!
In this interview, we discuss pitfalls to avoid when starting a business, why you need a podcast (and an editor!), why abundance doesn't have to be defined by dollars, and how examining what we choose to spend money on can indicate a variety of things, such as our ethics, even misinformed decisions, or, in my case, my disdain for tipping.
You can listen to the episode on video or on your favorite podcasting platform - Reaching Abundance hosted by Virginia Elder.
