There is some good new out there 😊 Since July 2015, the state of Vermont has required medium-sized institutions to adopt a “food recovery hierarchy” with the goal to eliminate food waste in landfills. The hierarchy is as follows:
1. Source reduction
2. Food for people
3. Food for animals
4. Composting and anaerobic digestion
5. Energy recovery

After source waste reduction, food for people is the second priority. By donating edible food to rescue organizations, Vermont businesses help to reduce hunger insecurity and landfill emissions. Since 2015 the Vermont Foodbank has seen a 24% increase in food donations.

Vermont’s Universal Recycling Law now bans food scraps in landfills all the way down to the household level. For more information visit: anr.Vermont.gov/news/UR-food-rescue

Bright and spicy with a touch of cardamom! Zhoug (pronounced zoog) is an spicy cilantro sauce originating from Yemen. We added upcycled carrot greens, reducing food waste with every bite! Drizzle the perfect, spicy condiment over beans, yogurt, grilled veggies or add to a salad dressing.
