A fully vegan mac and cheese spot is here in Portland and it’s called Macaroni in a Pot It is the brain child of Maya (they/them), Buddy from Buddy’s Steaks, and Riley, the head chef. Three scorpios on a mission. This food cart in the Hollywood neighborhood is cooking up mac and cheese with some of your favorite flavors like their pesto mac, jackfruit brisket mac, buffalo mac and cheese and jalapeno mac 😋Their cheese sauce is made in house that is a cashew, coconut, and soy base mixed with Buddy’s Steaks classic whiz sauce. It is creamy and satisfying!It’s the perfect comfort food with this cold weather and you get A LOT, so it’s great for leftovers too. It’s a must for a great experience with excellent customer service and really, really good food. 02/07/2023
