Wellness Coffee

For a more nourishing, plant-based morning drink that's healthier than your coffee chain's syrupy offerings, try this. Packed with vitamins, minerals, fiber, and healthy fats, it will get your morning off to a great start!

Handful of raw almonds or cashews, soaked overnight and drained (scant 1/8 cup)
1 c freshly brewed coffee, slightly cooled
1/2 scoop vanilla protein powder
1/2 tsp agave or 1 pitted medjool date (soaked overnight)
3T cooked pureed sweet potato (optional)
Cinnamon or nutmeg (optional)
Allow coffee to cool toward room temperature before adding to blender with other ingredients. Blend on high speed for 30 seconds until frothy. Reheat in mug in microwave if desired. Finish with a pinch of cinnamon or nutmeg, if using.
