Made Rotini Pasta for dinner using keto friendly pasta from Pete’s Pasta
On the side made some toast from keto bread and added butter and the buttery garlic seasoning from Kinders
Roasted Asparagus Caprese
Ingredients
• 1 bunch asparagus (about 1 lb), ends trimmed
• 1 cup cherry tomatoes, halved
• 1 cup fresh mozzarella
• 1 tbsp olive oil
• salt and pepper to taste
• 2 tbsp fresh basil, chopped
• 1 tbsp balsamic glaze
Instructions
• preheat oven to 400°F
• place asparagus and halved tomatoes on a parchment lined baking sheet
• drizzle olive oil over both
• season with salt and pepper
• roast for 10 minutes
• remove from oven and top asparagus with mozzarella
• return to oven for 5 minutes until cheese melts
• mix chopped basil into the roasted tomatoes
• spoon tomatoes over the asparagus
• drizzle with balsamic glaze
