๐ฅ Crunchy Veggie Sushi Tacos ๐ฃ๐ฎ
Where Japanese flavors meet taco night โ no raw fish, no special tools, just fresh & fun fusion!
๐ Ingredients (Makes 6 mini tacos):
1 cup sushi rice
2 tbsp rice vinegar
1 tsp sugar + pinch of salt
6 small nori sheets (cut into circles or taco shapes)
1/2 cucumber (thinly sliced into matchsticks)
1/2 carrot (grated or julienned)
1 avocado (sliced)
1/4 cup red cabbage (shredded)
1/4 cup cooked edamame (optional)
2 tbsp sesame seeds
Soy sauce + wasabi + mayo (for drizzling or dipping)
Optional: pickled ginger, sriracha mayo
๐งโ๐ณ Instructions:
Cook the Rice:
Cook sushi rice according to package instructions. While still warm, mix with rice vinegar, sugar, and salt. Let it cool.
Prepare the Taco Shells:
Lightly toast the nori sheets in a dry pan for a few seconds to make them pliable, then shape them into taco shells using a taco rack or fold them gently and hold with tongs until they cool.
Assemble the Tacos:
Spread a layer of sushi rice inside each nori shell. Add cucumber, carrot, avocado, cabbage, and edamame.
Top & Serve:
Sprinkle sesame seeds, drizzle with soy sauce or spicy mayo, and serve with pickled ginger and wasabi on the side.

Beef and Sweet Potato Stir-Fry
๐ฅฉ Savory, quick, and packed with flavor!
Ingredients:
300g beef strips (sirloin or flank steak)
1 large sweet potato, peeled and thinly sliced
1 bell pepper, sliced
1 onion, sliced
2 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 tablespoon vegetable oil
Salt and pepper to taste
Optional: sesame seeds and green onions for garnish
Instructions:
Prepare the sweet potatoes: Lightly steam or microwave the sweet potato slices for 3โ4 minutes until slightly tender but not mushy.
Sear the beef: In a hot pan, add vegetable oil and quickly stir-fry the beef strips until browned. Remove and set aside.
Stir-fry veggies: In the same pan, add onion, garlic, and bell pepper. Stir-fry for 2 minutes.
Add sweet potatoes: Toss in the sweet potato slices and cook until they start to caramelize.
Combine and sauce: Return the beef to the pan, pour in soy sauce, oyster sauce, and sesame oil. Stir everything together for 1โ2 minutes.
Serve: Sprinkle with sesame seeds and chopped green onions if desired. Serve hot over rice or noodles!

Spiced Lentil & Sweet Potato Stew ๐ฒ
A hearty, protein-packed dish thatโs perfect for a cozy meal. This stew is rich in fiber, vitamins, and warming spices, making it both nutritious and delicious!
๐ฅ Ingredients:

1 cup red lentils (rinsed)

1 large sweet potato (diced)

1 small onion (chopped)

2 cloves garlic (minced)

1-inch ginger (grated)

1 tsp cumin

1 tsp turmeric
โ
ยฝ tsp smoked paprika

ยฝ tsp cinnamon

1 can diced tomatoes (14 oz)

3 cups vegetable broth

1 tbsp olive oil

Salt & pepper to taste

Fresh cilantro (for garnish)

1 tbsp lemon juice (for freshness)

1๏ธโฃ Heat olive oil in a pot over medium heat. Sautรฉ onion, garlic, and ginger until fragrant.
2๏ธโฃ Add cumin, turmeric, paprika, and cinnamon. Stir for 30 seconds.
3๏ธโฃ Add diced tomatoes, lentils, sweet potatoes, and vegetable broth. Stir well.
4๏ธโฃ Bring to a boil, then reduce heat and let it simmer for 25 minutes (until lentils and potatoes are tender).
