STORY TIME!
After injuring my leg in the same spot for the second time, I was forced to take a month off of lifting with my lower body. At first I was really frustrated because I have come so far and I’m finally starting to see the results that I’ve been working so hard for. Then I realized that it’s okay, that the gym and my knowledge of getting to my goals will still always be there. I accepted the voice from my body and the universe as it was giving me time to slow down and really be with myself.
So often us humans get caught up in the grind of our weeks and goals that we forget to slow down and give our bodies a little TLC. My first thought was “oh no, I’m gonna lose all the muscle I have put on in the past year”, but the reality is that one doesn’t lose muscle that fast, and our bodies have muscle memory that will help the muscle come back quickly when I do start up again.
This is a reminder that it’s okay to take a break, slow down, listen to your body and be kind to your mind. Our mind does not always know what’s best for us in the present moment, but our body does, simply because it tells us what it needs.
I’m taking a little bit longer to fully recover through yoga, stillness, and healthy food, and then I’ll be back to the grind with a well-rested leg! 💪🏼♥️💦

VEGAN FRENCH TOAST
What better way to start the weekend off than a yummy breakfast made with love?! This recipe is so simple and is such a perfect combination of flavors, and the best part is, you probably already have most of these ingredients at home!✨
ingredients:
6 Tbsp corn starch
1 cup plant-based milk
4 tsp maple syrup
1 tsp cinnamon
pinch of salt
2 tsp (plus more if needed) vegan butter
4 slices of thick white bread
method:
•in a shallow bowl, add corn starch, then slowly mix in plant-based milk using a whisk until there are no clumps
•add maple syrup, vanilla, cinnamon and salt, and stir to combine (you can divide the batter in half and use on two separate days, use it all at once, or double the recipe if making for more people; recipe yields 2 servings)
•add butter to pan on medium-low heat
•dip each slice of bread in batter for 10 seconds on each side and cook immediately in pan for approximately 5 minutes on either side
•top with things like berries, vegan butter, maple syrup, oat-based whipped cream
