The Roman-style preparation includes using pork butts, sometimes stuffed with garlic cloves and other herbs. We use our signature Porco's Spice Mix (it's a secret), including Calabrian chili flakes and fennel pollen. Shout out to Sanchez for being consistent, and arriving early to butcher, season, and slow roast the pigs! 🔥
