Summer can be a hard time to get a meal on the table. We’re always running around enjoying the sun. This dinner was done in 20 minutes and everyone gobbled it up!

Ground Beef Ramen
•Brown 1 lb ground beef and 1 chopped onion. Remove from pan and set aside.
•In the same pan add 1 Tb olive oil and 1 package frozen stir fry vegetables. Cook through.
•Add beef back into the pan with the vegetables. Mix in: 1/4 C soy sauce, 1 Tb brown sugar, 1 Tb apple cider vinegar, 1 tsp ginger, 2 tsp sriracha.
•meanwhile, boil 2 packages ramen (without seasoning) in 1 1/2 C water.
•combine beef mixture and ramen (I drained a little water out). Top with fresh green onions and sesame seeds.

It happened. I dropped him off for his first day of kindergarten, blinked, and he graduated 5th grade.

Change is hard! He’s my oldest and Ill always see him as my little guy. Love you B!
