Pineapple Upside-Down Cake
Ingredients:
For the Topping:
1/4 cup unsalted butter
1 cup brown sugar, packed
1 can (20 oz) sliced pineapple in juice (drained, juice reserved)
10 maraschino cherries (optional)
For the Cake:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk (or reserved pineapple juice)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Topping:
In a medium skillet, melt the 1/4 cup of butter over medium heat.
Stir in the brown sugar until dissolved, then remove from heat.
Pour the mixture into a 9-inch round cake pan, spreading it evenly over the bottom.
Arrange the pineapple slices on top of the sugar mixture, placing a cherry in the center of each pineapple slice if desired.
Make the Cake Batter:
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the milk (or reserved pineapple juice). Mix until just combined.
Assemble the Cake:
Pour the batter over the arranged pineapple in the cake pan, smoothing it into an even layer.
Bake:
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a serving plate.
Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Chicken Stuffed Crescent Rolls 🥐🧀
Ingredients:
- 1 package of crescent roll dough
- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions:
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a bowl, mix the shredded chicken, cheddar cheese, mayonnaise, garlic powder, salt, and pepper until well combined.
3. Unroll the crescent roll dough and separate it into individual triangles.
4. Spoon about 1-2 tablespoons of the chicken mixture onto the wide end of each triangle.
5. Roll the dough around the chicken mixture, starting from the wide end and tucking in the filling as you go to form a crescent shape.
6. Place the stuffed crescent rolls seam-side down on the prepared baking sheet.
7. Bake for 12-15 minutes or until the crescent rolls are golden brown and fully cooked.
8. Remove from the oven and let cool for a minute. Garnish with chopped fresh parsley if desired.
9. Serve warm as a delicious appetizer or main dish.

Easy Mexican Taco Lasagna🍲
Ingredients:
- 12 oven-ready lasagna noodles
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (16 oz) refried beans
- 1 can (10 oz) diced tomatoes with green chilis, drained
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3. Add the taco seasoning and follow the packet instructions to mix it with the cooked beef.
4. Stir in the diced tomatoes with green chilis and refried beans until well combined. Remove from heat.
5. In a 9x13-inch baking dish, spread a thin layer of the beef mixture on the bottom.
6. Place 3 lasagna noodles over the beef layer, followed by more beef mixture.
7. Repeat the layering process until all noodles and beef mixture are used, ending with the beef mixture on top.
8. Cover the dish with aluminum foil and bake for 25 minutes.
9. Remove the foil and bake for an additional 10 minutes to brown the top.
10. Let it cool for 5 minutes before serving.
