🥑on toast is delicious, but we also love it in salads. It's a great way to add some healthy fat so you can feel full longer. You want to make sure you have some protein too, so add some grilled shrimp, chicken, or chickpeas and you got a well-balanced meal!
How about our Avocado Shrimp Salad tonight?
Here is the recipe✍️🧑🍳
1: Heat a skillet with 1 tbsp olive oil.
2: Add 2 garlic cloves (sliced) and fry 6 shrimp.
3: Set aside. Thinly slice ½ bell pepper, ½ onion and ¼ red onion.
4: Cut ½ cup cherry tomatoes in half.
5: Slice ½ avocado.
6: In a small bowl, combine 1 tbsp honey, 3 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar, salt and pepper to taste.
7: In a mixing bowl, combine 2 cups salad leaves (spring mix), 1 cup baby spinach, all the cut veggies, and the cooked shrimp.
8: Pour the dressing over, stir together, and serve intermediately. Enjoy!
