🍣 The original sushi of Japan is called narezushi, and it has Chinese roots. It was first brought to Japan in the eighth century and was made of fermented rice and salted fish. To stop germs and other microbes from growing and to extend its shelf life, it was combined with rice vinegar and sake and placed beneath a huge stone.

🍣 Unlike modern sushi, which uses the rice for both cooking and eating, narezushi solely uses the rice for fermentation.
