We felt a little introduction was necessary 😉
This soup is currently on repeat for lunch even though we are in CA at the moment and it’s not necessarily soup weather. 🤷🏼♀️ as a warning, we like our food 🌶️SPICY🌶️ so if you’re making this soup according to my recipe, feel free to switch up the ingredients for some tamer ones.
INGREDIENTS:
•jalapeño (sliced)
•1/4 red bell pepper (chopped)
•1/4 Orange bell pepper (chopped)
•1/4 yellow bell pepper (chopped)
(Or use whatever veggies you have in your fridge, ya know?) 😂
•However many snow peas you feel like throwing in there
•bamboo shoots
•cabbage
•frozen dumplings (I got mine from Walmart)
•lime
•green onions
•**cilantro** - I didn’t have any cilantro when I was making this video but add some to your bowl before you eat it and it is 👌😘
•**leftover rice** - I added rice in this video but I much prefer it without. Just saying.
•chicken broth- as much broth as your heart desires. Feel free to use vegetable or beef broth instead
•soy sauce
•fish sauce
•sriracha
•minced ginger
SEASONINGS:
•Thai chili flakes
•paprika
•cayenne pepper
•Cajun seasoning
•caldo de pollo
•hot chili oil
•garlic chili paste
Heat up preferred oil in a pot on medium heat.
Once oil is hot, add desired amount of dumplings and stir to coat dumplings evenly in oil.
Cover and let brown on all sides, stirring frequently.
Once dumplings are browned, turn heat down to low and add chopped peppers, stirring to coat evenly in remaining oil.
Cover and let simmer for 3-5 minutes.
Uncover and add desired amount of broth, stir.
Add snow peas to the pot and stir.
Cover and let simmer for 3-5 mins.
Uncover pot, stir in desired amount of bamboo shoots.
Add desired amounts of soy sauce, fish sauce, and ginger. Stir well.
Next, add desired seasonings as well as any chili pastes/oil and stir.
Stir in cabbage and cover for 1 minute.
Uncover pot, add green onion, cilantro and desired amount of lime (I like about a quarter of a lime) and stir.
Enjoy!

We get asked a ton of questions about our journey, so I thought I’d answer a few while doing a HATED task in the RV community- making the bed. I actually don’t mind it as much as I thought I would but YES, I am thinking of getting a if any fellow RV’rs have an opinion on them.
