We recently returned from Mexico, one of the first regions to cultivate peppers. Couldn't wait to implement the lessons learned into our Jalapeno-Pineapple Pepper Sauce. This is going to be an excruciating wait for the ferment to take its course.

I was working in the lab one night
When my eyes beheld a spicey sight
From my eyes, tears began to rise
And finally, to my joy and surprise
We did the pepper mash
