Yeah it’s Friday! I know the hard work that goes into making good food choices all week. But don’t let the weekend set back your progress. For example, you can add a few things to a side item at dinner to make you feel like you ordered out, however maybe it’s a little healthier and keeps you on plan. In fact, this asparagus recipe, my extremely picky 9 yr old, will even eat up. 😋

Garlic Asparagus (4 servings)
Each count as: 1 Life Carb & 1 Life Fat

Ingredients:
2 tsp. Minced garlic
3 tbsp. Dijon mustard
1 tsp. Olive oil
1 tsp. Lemon juice
1 lb. asparagus, trimmed

Directions:
1. Preheat the oven to 400 degrees.
2. Combine garlic, Dijon, oil, & lemon juice. Line asparagus on a baking sheet and drizzle with sauce.
3. Bake for 10 minutes (until tender) and enjoy!

Slow Cooker Sausage Breakfast Casserole
INGREDIENTS
1 (26 to 32 ounces) package frozen shredded hash brown potatoes
1 package Jimmy Dean® Hearty Original Sausage Crumbles
2 cups shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
1/2 cup sun dried tomatoes packed in oil, drained, julienne cut
6 green onions, sliced
12 eggs
1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper

PREPARATION
STEP 1
Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended. Pour evenly over potato-sausage mixture.

Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
