Quick, tangy, and scrumptious đŸ˜đŸ‡”đŸ‡­
I had to make this. I realized I haven’t had any home food in months until very recently. At least one of my many homes.

Apparently, pancit canton was a dish created by the Chinese in the Philippines. While ‘canton’ was used to give the dish a “ring of authenticity”, ‘pancit’ is Hokkien for ‘pian e sit’ which means ‘conveniently cooked’. Very true. Once you have everything set up, this dish adaptation takes less than 20 minutes, tops ⏭ Thanks, .sky & for info on this dish’s heritage.

For the love of God, . There is so much to be said, but please, wherever you are in the world, now is the time to consider your biases, both mental and in action.

🍋 PANCIT CANTON
🧄 Fillings:
- vegetable oil
- lots’a garlic
- onion
- carrots
- chives
- salt
- pepper
- green onions
- spinach
Pan fry (but leave out spinach & keep some green onions for serving).
đŸ„šEggs:
- 4 eggs / egg-whites
- salt
- white pepper
- touch of soy sauce
Beat. When toppings are done frying, push to the farther side of the pan. Tilt pan down so that oil gathers at the bottom. Pour eggs into the oil, moving around and breaking them apart so they are thoroughly 🔄 scrambled.
🍜 Noodles:
- flour noodles
Add directly or after draining depending on packet instructions. Mix!
đŸ„Ł Sauce:
- some soy sauce
- a little oyster sauce
- a little Adobo or similar powdered meat-flavor broth or seasoning (no, not the Filipino adobo stew)
- some sugar
- a little white pepper
- a LOT of lemon juice (or a LOT of calamansi juice if you have access to the wonder that is calamansi)
Pour sauce all over and add in spinach to quickly cook. Fry and toss. Top with green onions and serve with toyo-calamansi (soy sauce w/ calamansi or lemon if you lack mansi)!


Also good with chicken or other meat.

Sunsets are weird. You would think that the world would be dark after the sun... you know, set. Turns out that, up until then, you’ve only seen half the story. Once the sun is gone, that’s when the sky goes crazy.

You know life? Life’s weird, too. You go most of your life to date focusing on a goal, and then once you’ve reached it, you think all the excitement is over. But it’s after you’ve achieved that huge thing you’ve always wanted that life gets all kinds of interesting—at least, if you stick around and let yourself see the sky going crazy.
