First Tip on How-To Save Time...and Money eating healthy.
Firstly...let us dispel the idea that eating healthy is expensive. It 'tis not. A 10lb sack of Idaho Potatoes costs $3. I can get a dozen ears of corn for $2.50. A bag of Kidney beans is $1.99.
Rice is cheap. Head lettuce is cheap. Celery is cheap. Apple Cider Vinegar for making homemade dressings is cheap. No Salt Added canned veggies cost the same. And with it being Farmers' Market Season... game
What isn't cheap are the fancy packaged "low fat" this and "healthy choice" that...which none of that is healthy anyway.
With that being said..to eat healthy you don't even have to cook. Peel a banana or smash into a bowl of cherries for lunch. And with that that being said...lol..that can be a bit boring, I get it ...but even cooking doesn't have to take time. I am a master at not wasting time in the kitchen.
So my first Tip on how-to save time AND eat healthy.
Crock Pot BABY!!!!
Specifically ...Crock Pot Soups.
Here's how it works.
Depending on the soup you're looking at anywhere between 5 and 20 minute prep time. Now the cooking takes hours...but that ain't on you! That's the Crock Pot's job!
In the morning, take out whatever veggies you want in your soup. ie: Carrots, Celery, Onion, ...ummm... let's go with green beans, potatoes, corn, maybe some cabbage. ...and chop them up. Toss them into the crock pot with a large can of unsalted Tomoato sauce.. add in the pepper, garlic powder, onion powder, paprika, maybe a little rosemary or dill... fill the rest of the pot up with water... HIT ON BUTTON... and let slowly cook all afternoon.
STUFF FACE
TURN crock pot off
Let cool
Stick in fridge
Take out of fridge next morning
Turn on crock pot again and let slowly heat up for dinner that night.
Now.. you could partner your soup with a salad. No need to chop anything up... really. Get the bagged spinach or do a wedge salad. Take a head of lettuce, cut it in half, stick it on your plate and drizzle dressing on top. Healthy dressing of course. Check out my photos for an idea for a vegan ranch dressing.
IF you don't have a crock pot, no biggie. a good old fashioned soup pot works great.
